Chef Pandita’s Spooky Pumpkin Pancakes

Ingredients:

150g egg whites (3 large eggs aprox.)

100g of pumpkin puree (1/2 cup)

1/2 tablespoon of Solococo Coconut Oil

1 tablespoon of coconut sugar or stevia for baking

2 tablespoons oat floor

1/4 teaspoon of baking powder

1/2 teaspoon of cinnamon

A pinch of nutmeg, cloves, all spice, ginger (optional)

Steps:

Whisk together the dry ingredients. Beat the eggs with a hand mixer until foamy. Fold in the pumpkin puree and the coconut oil. Mix in the dry ingredients and cook the pancakes in a non-stick  skillet using Solococo. You can frost them with 1/2 plain greek yogurt and vanilla créme flavored liquid sweet leaf stevia.
